One small bakery in Bundaberg QLD is going to do exactly that, they have trial baked at award winning café Indulge and the feedback was outstanding to the point where the owner/self taught baker Rick Nelson felt compelled to give in his day job and follow his passion of Sourdough after becoming a type 2 diabetic himself, losing 25kg and controlling his diabetes without tablets but instead with fermented products added back into his diet.

Rick Nelson said " After going on a low carb diet to lose weight I realised that being low carb all my life wasn't going to be sustainable so instead I looked at what foods assisted in blood sugar control.What I found with simple searches on google was that true fermented products didn't spike blood sugar, so I shifted to include pickles and my own sourdough in most of my meals and my blood sugar kept dropping. My blood sugars are now between 4 and 5 which is normal and my last 9 months of blood tests would suggest I no longer have diabetes, but no matter I'll stick to being good and eat my sourdough bread instead of commercial yeasted bread. There is a lot to be said about gut health and I have had great feedback so far from gluten intolerant and even wheat intolerant clients eating my bread, it's just amazing".
