In just 8 days, the 2026 Royal Canberra Show opens at Exhibition Park in Canberra (EPIC) with 8 brand-new sweet sensations you won't find anywhere else. 

Running 20-22 February, prepare for colourful swirls of sweetness as the dessert wizards serve up seriously impressive creations. 

It's going to be sweet.

Exclusively launched at or created for Royal Canberra Show 2026:

1. Mellabella Gelato sparks pure joy with the debut of their Rainbow Fairy Floss Sundae. A scoop of Rainbow Gelato topped with a pastel fairy floss cloud.
    
2. Sticky and delicious, the Royal Ultimate Loaded Waffle. Built on a perfectly crisp yet fluffy waffle, this comes stacked with all the indulgent extras including sauces, sprinkles, fruit, cream, chocolate, and more - they drizzle it, load it, and serve it on a stick.
    
3. Birthday Cake Soft Serve Cone - a party in every swirl. It's the kind of cone that turns grown-ups into kids again and kids into instant superfans.
    
4. Choccy Kinder Crunch Strawbs. Imagine a cup full of fresh sweet strawberries dripping in creamy, crunchy, chocolate sauce with kinder crunch topping. Strawberry perfection in every bite.
    
5. Pang Pang - Build Your Own Fruit Candy Stick. Show goers build their own fruity fantasy: juicy pieces of fresh fruit dipped, coated, or glazed in shimmering candy for the perfect mix of sweetness and sparkle. Every stick becomes a personalised edible masterpiece.
    
6. Chocolate or Caramel Donut Layered Trifle. Layered with fresh, hot donut puff balls with creamy vanilla soft serve sandwiched between.

Following a record crowd of 56,000 last year, Royal Canberra Show CEO Adelina La Vita said the sweet treats line-up signals one of the most Instagrammable aspects of the show.

"These aren't just desserts, they're show-day memories in the making," Ms La Vita said. "With 8 exclusive sweet creations launching for 2026, every bite is designed to delight. Bring your camera, bring your sweet tooth, and bring your friends - this is our sweetest year yet."

As its centenary approaches in 2027, the Royal Canberra Show has never looked stronger.
