Local Melbourne Roaster Veneziano Coffee Home to World Accredited Coffee Judge.

Craig Dickson, CEO of Veneziano Coffee has just received his certification as a World Barista Championship certified judge. Previously a nationally qualified judge, this higher level of certification means Craig is one of only five people in Australia, and only 52 in the world, qualified to judge at world barista competitions. The competition is held in a different country each year; this year’s competition will be held in Bogota, Columbia.

Certification is only valid for two years, with judges required to redo the stringent sensory skills testing to ensure competitors are serving up coffees to the most qualified and tested palates. Rigorous testing includes a written examination of over 200 questions, including: understanding of rules, score sheets, origins, processing methods; a practical test where a competitor is judged and the participant is tested on protocol and interaction with the competitor, and the participant's score is calibrated with the scores of other world judges; and, a sensory test where plunger coffee is used to identify the levels of sweetness, acidity and body in the cup.

There is also the triangle test, that involves selecting which cup has three taste components. The participant must choose which cup of the three is the odd one out. For the visual calibration test, the participant must score the colour of the crema and the consistency and persistence of the crema and visual correctness and the consistency and persistence of the foam on a cappuccino in quick succession via a video presentation.

Overall you must score 80% to pass this very difficult test. Even to attend this judging calibration you must have judged at state and national levels for at least two years and must submit a written application prior to the certification workshop.
