Learn the techniques of food preservation with the Preserving Food ebook written by John Mason and ACS Distance Education staff.

The Food Preserving ebook covers the many areas of food preservation. Beginning with food preservation methods, this ebook looks at the reasons why food is preserved and the history of food preservation. Moving onto food spoilage, microbiology, enzymes and food-borne disease and infections, this ebook gives you a description of what could make the food turn bad or in-edible.
