Brighton's first Pop In venue to open for ten days

Brighton is gearing up to experience the first ‘Pop In’ venue of its kind, with the rebranding and development of Chi at 279 Bay Street, Brighton. Be ready, #buffaloiscoming

Commencing on July 16 for just 10 days, lovers of Vietnamese food are invited to the ‘Feed Me, Tease Me’ Pop In and be the first to check out the culinary crafting of chef Tam Dao, before the restaurant closes for a total reimagination.

“We wanted to offer Brighton locals and lovers of Vietnamese food from across Melbourne an opportunity to experience Tam’s vision – and to have the ‘Tease Me Feed Me’ experience,” said owner Alex Ye

Tam Dao’s story started in the Mekong Delta, where he was born among endless rice fields, running rivers and happy people, where hospitality and beautiful fresh ingredients abound.  He helped his mother pick vegetables and herbs in the yard while his elder siblings fished for the family.  There is nothing more local, sustainable and fresh than food fished and picked as it is needed. He grew up with an innate love of food and provenance, before moving to Australia a decade ago, settling in Noosa in the heart of Queensland’s Sunshine Coast. 

Stints with Ottoman Bistro, Spirit House, Rickys and The River Cottage further developed a love of seasonal and local produce, and at the end of his Queensland apprenticeship, Dao headed south to Melbourne to study pastry at William Angliss College. Not content with these skills, it was time to indulge his curiosity for wine and so he headed for Kellybrook Winery where French cuisine informed the style and Dao was instilled with a nose to tail philosophy.

Landing in Geoff Lindsay’s kitchen at Pearl saw Tam develop his skills with the tastes, fragrance and colours of modern Vietnamese food, and experimenting with these in the pastry kitchen before branching out to understand the workings of a catering kitchen.  If nothing else, Tam has an unquenchable curiosity for food.  He is ready to put this on the table at Buffalo Boy with a very simple mantra –

Everything comes from Little Things.
