Abundant Caravan into food truck, unused car park into pop-up restaurant, Courtney Kim has opened a healthy Korean Bibimbap restaurant in Melbourne CBD but this time, permanently. Bibimbap's offerings will stay true to Kim’s long believed concept of fast convenient healthy food with a taste of Korea. The menu will consist of tasty and rich in nutrition rice bowls - pairing up with healthy appetizers, desserts and Gimbap with housemade spam, discovered after Kim’s recent culinary trip to South Korea.
Courtney is a designer turned entrepreneur foodie who formerly started Bibimbap with an investment of $1000 into a crowdfunding campaign and has been building the venture from the ground up ever since. Coming from over 10 years of branding and marketing experience, starting a business wasn’t new to her. After launching Bibimbap food truck, it’s been named one of Melbourne’s top 5 food trucks and nominated for best Eat Drink Design award.
“Food truck and a restaurant are very different from what I used to do. Food trucks heavily rely on weather and it’s physically challenging. But what makes me keep going has to be the instant feedback and smiles on the customer's face after they try the food.”
“Crowdfunding proved that my food works as a food truck. The Bibimbap food truck quickly grew with loyal customers and I was fortunate to test the water with the pop up to see if it’d work with time poor busy office people. My pop-up opportunity on an empty lot in Punch lane early last year gave me confidence in opening a physical store”.
Bibimbap is on 21 Katherine Place, Melbourne and is expected to serve quick lunch Monday to Friday 10AM to 3PM.
