WHAT’S NEW WITHIN CORINDA’S OLD WALLS - Boutique Hotel Stay Hobart

May 2021 - Corinda is Hobart’s ultimate blend of old and new. Few may know the 1870s beginnings of this boutique hotel, when timber merchant-come-Lord Mayor, Alfred Crisp, raised ten children there. Even fewer would know that following 90-years outside family hands, Alfred’s great-great grandson, Julian Roberts, reclaimed the ancestral treasure in 2016. Even fewer again might know about all that’s new within Corinda’s old walls ranging from pop-up dining to in-demand Spanish cooking classes with Julian’s wife, resident chef Chaxi Afonso Higuera. We’ve pulled open Corinda’s 19th century door to fill you in on the latest.

 THE STORY

Corinda sits loftily on the hillside of Glebe, with generous views across the River Derwent and out to kunanyi / Mount Wellington. The story of this stately home dates back to 1828 when Alfred’s English father stole a sheep and was transported to Van Diemen’s Land. Alfred inherited his successful timber business and Corinda remained in the family until the 1930s. Much of the décor nods to this generational past with rooms such as Alfred Crisp’s Suite featuring the original blackwood lavatory or ‘thunder box.’

 POP-UP DINNERS

Every Friday night (pending bookings), Corinda offers pop-up dinners with the winter series featuring cuisine from France’s Burgundy region. Limited to just 30 guests, Chef Ben Gilligan prepares a five-course meal paired with Tasmanian wines. With no flights to France for the foreseeable future, at $169/head, Corinda transports guests to Burgundy for an evening by the stately fire. Pop-up dinners are available to both in-house guests and the general public.

 COOKING CLASSES

Co-owner and in-house chef Chaxi is set to launch her highly anticipated Spanish cooking classes this May. Raised in the Canary Islands, Chaxi’s craft began under her mother’s wing and has been honed in kitchens across the globe. Partnering with Chef Ben, the four-hour classes (11am-3pm) cover authentic Spanish classics. Traditional Spanish morning tea is followed by hands-on instruction, a full shared lunch and a farewell complete with authentic ingredients to-go and a recipe booklet to recreate at home. The limited courses are $225/person, with a maximum of 16 participants. Though starting with Spanish cuisine, the classes will be a roving international feast throughout the year.

THE GARDENS

There’s little wonder brides trip over each other to share vows in Corinda’s neatly manicured gardens. With kunanyi / Mount Wellington as its backdrop, the fairy tale setting is highly sought. Due to the garden’s popularity, Corinda offer Garden Tours ($19/head) for a minimum of 8 people across 45-60 minutes. Those wishing for a House and Garden Tour can allow a little more time; this $28/head experience including a tour of the main house complete with history dating back to the late 1820s. Morning tea of fresh pastries, tea and espresso coffee can be added for $10/head.

 HIGH TEA

The elegant setting of Corinda just begs for the fine China to be brought to the garden. High tea now takes place on Fridays at 2pm – ranging from a table in the garden to seating within the glass-enclosed verandah or the drawing room. High Tea includes self-guided tours around the house and garden, T2 leaf teas, roasted Villino coffee, quiche, sandwiches and sweet cakes for $45/head. Bookings for a minimum of 8 guests (max 20) can also be arranged as well as flutes of Tasmanian bubbles. Private bookings are available for any week day.

 NEW ROOM

A new room has become available for bookings in the main historic house – the Wellington Room. This charming room has a large bay window offering sweeping garden views, and like every other Corinda room, is entirely original in its design and style So that makes 7 rooms in the house soon to be 8, 3 cottages and 2 pavilions – room for everyone.  

 BOTTLED CUSTOM COCKTAILS

Corinda’s Honesty Bar continues to evolve with a new suite of bottled cocktails prepared by Chef Ben, former owner of award-winning cocktail bar Room 11, in Washington D.C. Set to launch imminently, these traditional and original recipes will tempt all.

 EVENTS

Corinda is already brimming with wedding bookings through until early 2022. While wedding season fills quickly, there is plenty of scope for other events that have become popular to host at Corinda, ranging from Paint and Sip, Stitch and Bitch and Flower Arranging Workshops in the garden, on the veranda, or by the fire.
