Mures is 100% vertically integrated business known for their hook-to-plate approach which are the anchors to the signature menu items. Started in 1973 by George and Jill Mure and now headed up by their son Will and his wife Jude. Mures Tasmania, incorporates a 23 metre longline vessel; a fish processing factory including a fishmonger outlet, in Cambridge, Tasmania and three award winning seafood restaurants (Mures Upper Deck, Mures Lower Deck, PEARL + CO) and a second fishmonger at Mures Fish Centre on the Hobart waterfront.
